Fry some potatoes up whatever way you like. diced, sliced.... add some onions too.
When the potatoes are almost done add some cactus and stir it with the nearly cooked ingredients. Give it a couple of minutes. Our cactus does not need a lot of cooking if you even cook it at all. There's no need to cook our cactus until it becomes dark in color, eat it fresh and alive and bright green!
For another cactus treat you can add eggs to the 'water-cactus-onion mix and scramble them in. When the eggs are cooked spoon the mix into warm tortilla shells and have them as breakfast burritos.
Many of our customers say they take cactus as a medicine. It does not take much to regulate blood sugar. It is said to slow the absorption of sugar into the body and reduces the spikes in sugar levels. This is an endorsement of a prepared cactus juice that is marketed nationally.

Nopales fried with eggs is one of the simpler cactus recipes, and one of my favorites.
Just get the sliced cactus frying in some oil, when almost done crack some eggs in and stir until cooked, then spoon out into tortillas. To make the best of this dish, fry some potatoes and onions first, then add the cactus and eggs when almost done. Season with garlic and peppers.... this makes the BEST breakfast burrito you've ever had... especially if you use a good cactus salsa to season it.....
Oh dang, I'm so hungry now.
And I just love how people like the taste of cactus, and tell everyone about it, and I don't even have to pay them!
