Nopales fried with eggs is one of the simpler cactus recipes, and one of my favorites.

Just get the sliced cactus frying in some oil, when almost done crack some eggs in and stir until cooked, then spoon out into tortillas. 
To make the best of this dish, fry some potatoes and onions first, then add the cactus and eggs when almost done. Season with garlic and peppers.... this makes the BEST breakfast burrito you've ever had... especially if you use a good cactus salsa to season it.....

Oh dang, I'm so hungry now.

And I just love how people like the taste of cactus, and tell everyone about it, and I don't even have to pay them!
